The license for my trial version for OSX Snow Leopard Server expired the end of november. However, i have not noticed anything different now after that date. What should happen after the expiration?

If it is the same as 10.5, the next time you restart it, it will show you a message stating that it is expired. Most of the functionality will stop working at that point.
