I recently went through my Applications folder and uninstalled some applications. Now and then, I'll find a file or a folder or a bunch of files and folders from an uninstalled application. Does anyone know of an application that can delete these files that I no longer need? Thanks.

Take a look at this thread, particularly post #16. Although I haven't deleted anything using this method, I have used it to find remnants that my preferred app remover (AppZapper) left behind.
No, I haven't heard of that one, but I will test it. You can test it, too. Here's the steps I follow:
- Select an app to test with (I use Skype because it has a unique name, so it's easier to find related files)
- Follow steps 1-7 in this post to identify the Skype-related files on your computer, but don't delete anything. Make a note of how many files you find.
- Close Finder and use CleanApp to identify what it can find related to Skype. Hopefully, it will allow you to do this without actually deleting anything.
- Compare your results and see what, if anything, CleanApp would leave behind.
I tested CleanApp using Skype. It left behind 6 folders and 7 files.
might i suggest you use FindAnyFile for future testing of that kind
just ran a quick test searching for an app called Knox (since i don't have Skype installed).
finder came up with 16 hits

It may have to do with FindAnyFile having the checkbox checked at "show package packages".
I've never seen any app that can find more files than Finder. When I say Finder found x number of files, I'm excluding files that it found that aren't part of the app's installation. Look at the complete list that Finder found and compare to the complete list that FindAnyFile found (your screen caps don't show them all). I'm betting that some are not related.might i suggest you use FindAnyFile for future testing of that kind
That may be it. That may mean that Finder is showing a package as one file, but FAF counts it multiple times, based on its contents.

You may want to edit your post and replace the tags with [img] to make the pic smaller.
You need to look at both lists and eliminate items unrelated to the app's installation, such as Safari history items, pictures that may have that name, etc. Do that with both Finder and FAF and see what you end up with.
One noticeable difference is FAF found one copy of the Knox application, but Finder shows 2 copies, one from July and one from September. Of course, you'll want to compare file paths to see where those are, and if FAF included it somewhere else.

Yes, you'd want to make sure both searches cover the same territory (both in Macintosh HD or both in a particular folder, etc.)
