So I come from an XS Max.. and I'm generally a big phone person. I had the X originally when Apple came out with the current design with notch and I never thought the phone was too small. However, the big crisp screen of the 6.5 is hard to pass down.

I have an Ipad Pro 11 inch.. and any of my major movie watching happens on that device.. I'm also thinking with the camera setup that there is something to be said about having such a powerful camera in the 5.8 design vs the slightly uncomfortable 6.5

what do you all think? this is the first year I'm seriously considering sizing down on the screen...

Sorry, but I don’t understand the rationale of these questions! It all comes down to personal preferences. There are some other threads on this as well. There will be people telling you that the Max is amazing and the regular one is too small while others would be saying that the Max is too big, etc.
It depends on how you use it, what you use it for, how you prefer to hold it, etc.
Personally, I tried the new Max for a week and I couldn’t force myself to keep it. It’s too heavy and too big to use it with one hand, which I prefer now after almost 2 years with my X.
Also, side by side the regular one and the Max appeared to be the same in terms of the battery usage while browsing. I didn’t see any advantages there on the Max: they both were losing the same amount of charge in the same intervals.

Get the small one and return it if you don’t want? It’s pretty simple.

The big difference will be whether you primarily use your phone 1 or 2-handed. If 1-handed go with the little Pro, 2-handed go with the Max. The other big factor is again, battery life. If that is important to you then the Max is the winner. I bought both and can vouch that the Max has much better battery life than the Pro. The results of my side-by-side testing between the 11 Pro and 11 Pro Max with identical apps, system settings, phone network and screen brightness levels:

Google Maps: 40% longer on Max
Gaming: 20% longer on Max
Video recording: 30% longer on Max
Video streaming: 33% longer on Max
Flashlight (max brightness, screen off): 40% longer on Max

I agonized over the choice for 2 weeks and finally went with the Max and have been very satisfied personally.

You say you’re coming from an XS Max. If you were fine with that you should be fine with the 11 Pro Max. The weight increase is minor.
However, as others note, it depends on how you use your phone.
Lastly, it’s your phone, buy what you want. No one knows what you need.

OP

I was in the same boat as you. Coming from the XS Max and having the iPad Pro 11 inch, the little 11 Pro was very tempting. So on launch day I got both, little Pro and Pro Max. Used them both on a daily basis for various activities. In terms of one handed usability the 11 Pro won but when it came to watching media like YouTube, etc or social media like Instagram the Max has a clear edge.

So like someone else said, it all boils down to how you use the device.

Oh yeah in the end I returned the little Pro and kept the Pro Max

I went back and forth on this and finally ended up with the Pro instead of the Max.

In the end one handed ease of use won out over the bigger screen - there are just too many instances where I use my phone one handed. It’s easier to take pictures with too.

If you're an iPad person get Pro. If you're a MacBook person (like me) get Pro Max.

If you have neither get Pro Max.
