Selling a pad to a friend...its a 3g unit...want to wipe everything...is it as easy as reset--->all settings?

And then sign on to att same way on my new ipad2?

Doing a restore on the unit from iTunes restores all factory settings. If you are planning on restoring to your iPad2, make sure to do a backup first.

Will this securely erase the drive? Where even the most dedicated hacker wouldn't be able to find anything?

No, most likely not - that would likely require more specialist tools and more effort. There is a dev team member - Jonathan Zdziarski is his real name - who focuses on iOS security and assists law enforcement with forensic recovery and such on iOS devices. Here's his site:

You may find better info on iOS data wipe and recovery there I think.
