Since replacing my 6S Plus with the 12 Pro, I noticed that my car deck (2015 Corolla) doesn’t update the signal strength unless I unlock the device. For example, when coming out of a no service area (underground), it will go to 1 bar and remain that way as I drive. Then if I unlock, it will display the accurate signal, once it locks again, it will stay at that new level unless I unlock again.

Does that happen to anyone with Toyota decks or any other cars, actually? The phone signal and battery indicators come from Bluetooth.
 
I don't own an iphone right now but I have owned several Androids and an iphone Xs a while back. I haven't seen the signal strength indicator in my car (Mazda) change when the phone is locked with any of them.
 
Maybe try forgetting each device and the pairing them again. I mainly use CarPlay now but I can’t remember that ever happening in other vehicles I’ve driven (Ford, dodge).
 
This has been a problem since, I want to say, the iPhone X for me. In that time I have gone through multiple iPhones and iOS upgrades, I've changed cars a few times including different brands, I've been on 3 different cellular carriers, and I've done full resets without restoring backups.

None of these things made it ever work. Super frustrating on my current car because the signal bars are always displayed constantly reminding me that they don't update and haven't for years without a peep from Apple on why.
 
I have a Pioneer in my dash. The S/S and prtocol(LTE, 5G) updates on Carplay display while my 12P is locked in my pocket. I can't remember if my X did as I didn't care what was displayed. I now pay attention to it occasionally to monitor the connection type as I drive around.

I think everyone's updates fine in CarPlay. We're talking about cars that display your signal strength when the phone is only connected to the car via BT.
