I know there's a ton of threads on the pro vs the standard, but I haven't found an answer to this specific question (please link me if it has been answered). Which of these is more "future proof"? Meaning I usually go several years between upgrades, so is one more likely to hold its speed in the long run versus the other? The differences in camera isn't a huge deal for me, but is there some camera difference for everyday use (I have a 3 year old so most pictures are of her or the family) that I'm not thinking of or some other spec difference I'm not thinking of that I need to consider?

Best look here:

Pro should also have a little better low-light performance because of a bigger sensor.

They're both more than suitable for your needs and will both last you several years without issue.

The fact there are people out there still using there 6s without any problem is all you need to know.

The only reason to get the Pro is if camera is a priority to you which you've already said it's not.

I think they’ll both last a long time and battery service if needed is not out of this world either. I’d just focus on which one I like more.

The Pro is more future-proof since it has LiDAR, which is rumored to be on all iPhone models next year. Also the 6GB RAM is nice to have, but not a major deal.

That’s given a really good use case comes around for the user and not just some AR gimmick. Curious to see what this will be good for.

I don’t see why you wouldn’t be able to get at least 5yrs out of either phone quite easily. Still see lot of iPhone 6 out there.

More or less to make AR more realistic would be my assumption. Admittedly I’m not super impressed with the improvements I’ve seen, but there’s potential for the future.

12 Pro Max

iPhone XR is still in the Apple store
When they stop selling phones they make sure you get several years of updates

Apple phones stay up to date for a long time ;)

From a paper standpoint, the 12 Pro is more future proof. +2GB of RAM. LiDAR Scanner. Telephoto lens. However, I think they’re a wash when it comes to a 4 to 5 year outlook. I imagine both will still be getting updates.
