I ordered a 12 but am now reading that the 12 pro has a 10 bit screen vs the 8 bit of the regular 12. From what I’ve read that mainly has to do with recording and watching back video.

I don’t do much video so would I miss the difference in screen in every day use??

I think if you have to ask this question, chances are good that you wouldn't notice. That's even more the case if you didn't have the two phones side by side to compare. The 12's screen is going to be beautiful.
 
Rumors circulated that the Pros would have 10-bit screens. Apple didn’t mention it, nor does the tech page highlight it. However, the Pros can record in 4K HDR 10-bit.
 
The biggest difference is in brightness. Whilst both have a peak brightness of 1200 nits, that's only when watching HDR content. In normal day to day use, 12 can go up to 625 nits of brightness, 12 pro 800 nits.

Interesting. It makes me wonder why they didn’t include USBC for faster transfers.
