Found a nasty little bug today while converting my MobileMe account to an iCloud account. Specifically, after restoring from a test iCloud account and then swapping to the converted MobileMe iCloud account. It has been reported to Apple but I thought it might help others out here that may be running into the same problem.
When you restore an iPhone from an iCloud account, the option to disable iCloud backups is no longer available (the on/off switch in iCloud settings is greyed out.) The bug is that when you delete the old iCloud account and create or in my case, enable a new account, the on/off switch remains greyed out preventing you from syncing backup information with your new account.
If you have restored your phone from an iCloud backup when upgrading to iOS 5 beta 5, you should sync your iPhone to iTunes and after a successful sync, reset the settings and data on your iPhone. After your iPhone reboots, sync your iPhone via cable with iTunes. After the sync, you can then choose or create an iCloud account and create a backup to the new account with your previous data and turn iCloud backup on and off as needed.
