I've been keeping an eye on the refurbished MBP's page for the past few wks...checking every day, and today they're all missing. Does this mean they're updating the CPU on the refurbished as well?

Refurb units are units that have been returned and refurbished. They could have been brand new and been returned within the 14 day period, or they could have had a fault and were refunded or replaced.

As the refurbs available are almost exclusively dependant on returned units, I wouldn't pay any attention to fluctuations in the availability of certain models. It doesn't mean anything's getting updated. :)
 
let's just buy into the conspiracy theory that apple removed them so you don't have access to cheaper 2016 versions while 2017 is rolling out.

is that really something that's outrageous from a business perspective? makes sense to me.
