I have a lot of software not compatible with Lion / Mountain Lion.

What 13" MBAs can be downgraded to Snow Leopard?

Only 2010 MBAs and older, as the 2011 MBA has a Thunderbolt chip with no drivers for Mac OS X 10.6 Snow Leopard, thus downgrading that model is a bit difficult, though maybe someone had success.
You could use MRoogle to find such lucky bastard.

My 2011 MBP has thunderbolt and shipped with Snow, but the 2012 I might be getting ships with ML. Adobe CS3 isn't compatible with ML, and I don't have the cashola to purchase the new CS6

The early 2011 MBPs with Thunderbolt came with Mac OS X 10.6 Snow Leopard, the late 2011 MBPs came with Mac OS X 10.7 Lion, though as the Thunderbolt chip in both 2011 editions of the MBP was the same, one can run Mac OS X 10.6 Snow Leopard even on late 2011 MBPs.
The 2011 MBA has a different Thunderbolt chip (smaller, due to space constraints), for which there are no Mac OS X 10.6 Snow Leopard drivers.

Maybe someone found a workaround, thus my link to MRoogle.
