So I'm wondering, when I use the scaled resolutions on my 13" Retina, whether it is at 1280x800, 1440x900, 1680x1050, does it affect how my 1080p movie in iTunes will look? For instance, if the display is only rendering at 1280x800 and I'm playing 1080p content, am I loosing pixels/detail/sharpness? I have an app that will let me force 1080p res on the screen, would rendering at that res that make the movies look better? Sharper?

The Retina screen is designed to be resolution-independent. So if you have your resolution set to 1280x800 or whatever, it will play movies in 1080p and photos in their proper resolution, etc. while everything else such as text/screen real estate appears at 1280x800. You don't need to force anything.
