I have my email accounts set to removed deleted emails after 1 week - that works, but I just realized their subject still shows in searches. The email itself is not there but wonder how much storage space is used by these old subject lines.
 
That's an old bug that's been around since iOS 2.0.

Spotlights also pulls information from the server, which is where your delete emails are at.
 
this happens with old SMS messages too!!..I was shocked to discover that messages I deleted months and months ago can still be found if you do a spotlight search.

I'd be interested to know which ones it find and how since it doesn't appear to be consistent.
