I left my iPad plugged into the MacBook Pro to charge overnight and forgot to plug in the MacBook Pro power. When I woke up the iPad was fully charged and the MacBook Pro was at 1%. My battery health was showing 100% the day before, now shows 95%, and has stayed there for a few days now.

Did I damage my battery??
 
Maybe, a deep discharge is very bad for the battery and can permanently damage it. Nothing much you can do, monitor the situation and avoid a repeat.

These things are approximate and unreliable, however most batteries last longer if you aren't taxing them with extra stuff. You are likely better off charging your ipad using AC, because it would be difficult to determine with any degree of confidence how charging the ipad that way impacts the expected lifetime of the battery. In my own anecdotal experience, these batteries tend to swell before their max charge ever dips below 80%, which is where Apple recommends replacement.
 
Yeah I would never have done that without the computer plugged into AC also, it was actually my girlfriend that plugged the iPad into my computer after I went to sleep, I'm just trying to take responsibility for it rather than accusing her of ruining my battery 😒

Ruined is a strong word here. It's unlikely that this is the only factor in the perceived dip, regardless of your observations. I would probably speculate over this too, but you should keep in mind that batteries have finite lifespans no matter how well you care for them. Most of them appear to operate reliably for 2-4 years, partly dependent on usage patterns, with significant variance.

As an aside, I understand you don't want to accuse her of anything, which is good. If this bothers you, in your situation, I would probably ask that she use her own electronic devices. You don't have to share everything just because she's your girlfriend.
 
Battery Health goes up and down. See how it does in a week or so.

Also, good you are taking responsibility. Carefully pick your battles.😁
