If I plug in my MBP when it's low battery (~5%), it immediately turns off and seems to go into a deep sleep. I'm able to wake it up after a minute or so. Has anyone figured out why this happens?

Consider replacing the battery...

Check in your System Information/Power tab.
What is listed as the Cycle Count, and what is showing for Full Charge Capacity?
How old is your MBPro?

Charge Information:

Fully Charged: No
Charging: No
Full Charge Capacity (mAh): 7190
State of Charge (%): 99

Health Information:
Cycle Count: 242
Condition: Normal

Your battery is showing good health.
Does your MBPro continue working if you plug in power before the battery gets to 5%?
If yes, then perhaps that's your solution (don't wait so long to plug in  ) -- or, just expect that you have to wait for the battery to charge back up a little before you can go back to using your laptop.

Does your laptop actually shut OFF?
And you have to re-open everything? Or does it just wake up, with everything as you left it?

Lol your right. It just wakes up after like 30 seconds. I just wanted to make sure my battery was ok because it seemed odd it has enough power to stay awake before plugging in but once it plugs in it needs to go to sleep
