This machine is still using the T2 chip.

Recall all the kernel panics in years past.

Was consensus ever reached on the T2 chip being the cause? Hardware? Software?

Haven’t heard about any issues in a while. Whatever problems might have been there in the past, seems to me they have been fixed.

What about coil whine, is that an issue in current 15”?
That's an ever-present issue across a huge range of electronics. Really is something that affects individual machines rather than being an inherent design flaw or anything, though, so if your unit did have it, swapping it out would be very likely to resolve the issue.

I've read some about it in a thread here. Is that the security chip? what electronics does it have issues with? And what does it cause?
Yes i am worried a bit since i just ordered a 16 inch.

the only issues I've seen with T2 MacBook pros are in enterprise. Especially behind a secure/restricted network where they would try to update software (firmware, macOS, BridgeOS, etc) and they failed.

The T2 chip isn't bad, somewhat restrictive if you need to retrieve data or get Locked out. Back-up back up back up.
