Definitely only need 500GB of storage so that puts me at the lower-end model. I'm curious what you people think about the other upgrades. Keep in mind I have student discount.

Processor - I mean, $280 to get a processor even faster than the high-end model is worth it, right?

Memory - I hardly ever play games but I occasionally edit photos and videos. Is there any situation where you think I'd need 32GB or is that simply overkill?

Graphics - Hmmmm. $90 to bump up a notch. I mean... I should do that, right? It's $90. Or is it a complete waste. I don't know!

The processor upgrade is not worth it. [1][2]

It really depends on when you plan on upgrading from this machine. If you're going to be using it for 3-5+ years I'd recommend 32GB since you might encounter a situation where you need 32GB and can't retroactively upgrade.

Probably not worth it. But I personally would go for it :)
