Other than the added space for apps and media, any really big advantages of the 32GB model over the 16GB? Really can't anticipate that the 16GB would reach capacity over 2 years, but is there something I should be thinking about that I'm not?

There is no difference other than what you already stated: capacity. So that is the only thing you need to consider.

With 1080p recording on your camera, if you're into video recording, you'll likely appreciate the 32 over the 16, but if you know you won't use it that much, then you'll be perfectly comfortable with the 16.
