Not sure if anyone knows this but is there any speed differences? Like if you got down to 2gb left on the 16gb and you run a lot of apps will the 32gb seem faster?

No. It's not like apps use the storage space to swap memory. So apps run at the same speed whether the storage is 1% full or 99% full. Unless you run out of space for apps to save data, in which case they'll probably just crash.
