Picked up my 17PM on Friday. Saturday evening, in the bedroom I noticed that I was on 5G, didn't think about it much.
Today, early afternoon, sitting at my Mac, I noticed my Ultra 2 was locked, picked up the phone to unlock it, the phone was on 5G.
Then about 45 min ago, sitting down to watch a show (on ATV connected to WiFi), same thing, interconnected to WiFi only to see 20 min later that it dropped WiFi again.

Anyone have that experience?

I know it's a new WiFi chip, N1 and I know that I can return the phone, just wondering at this point if anyone has seen this?

Edit: router is an eero 6E and had zero issues in the last year. The 2 last drops, the phone was within 3 feet from the router, the one before, maybe 10 feet.

Same issue here with the iPhone 17 Pro Max, but I don't have an Apple Watch. The Wi-Fi randomly connects and disconnects throughout the day, even while actively using the phone. I have excellent Wi-Fi reception throughout my house and my prior iPhone 13 Pro Max has been completely stable (never any disconnects/reconnets), so that's not an issue. I've even completely removed the network and re-created it but that hasn't helped. It's very frustrating. Also, I don't have WiFi Assist enabled or anything else that would/should cause any switch away from Wi-Fi either.
 
I find this thread both interesting and concerning.

I have a 17pm and I don’t seem to be experiencing this issue. I’ve had it since launch day.

I also got an Ultra 3 that’s been set up since Friday.
 
No WiFi problems on my 17PM. I am on. XFinity and getting around 1900 mbps.

Yea, weird indeed.
Strangely it seems to happen more frequently in the evenings to me, like last night, every time I picked up the phone and unlocked it it showed 5Guc and then after a few seconds switched to WiFi, happened 4 or 5 times in a row whereas during the day I didn't notice it.
And yes, I have an U2.
And thus far no issues with wireless CarPlay for me, though my trips were of shorter (less than 20 min) duration.
 
What’s interesting is, I didn’t and don’t have this issue with showing the 5G symbol. However, I do have alerts set on my network. And I’m getting inundated with connect disconnects.
