Wondering if I should stick with 1TB or really need 2TB.

My uses are coding (k8s, docker, python), app development (Xcode, emulators), likely will use Parallels (so going with 32GB). I also do some video editing on FCPX and occasional logic pro X work (casual). Other than that, it is my educational machine for ML modeling, etc. so I want to be able to host some VMs as needed (incl. Windows10).

Is it worth spending $400 for that extra 1TB or should I just get a nice external TB3 SSD?

Oh well. I went with 2TB.
 
there's something nice about it being all together on the internal drive if you can afford it, enjoy your new 16" heh

I went with 2TB last time and realized I have really only used a quarter of the space. This time I opted for the base 1TB configuration. The only person who can really answer the question is you. When in doubt, go for the larger storage. Enjoy. You‘ll love It.

All media for editing should be on an EXTERNAL drive. So you should still get something external to store media.
And the reason is? Who would not want to have everything on this portable laptop, not having to carry any external drives... plus unless they're SSD ones, they're quite slow and it can get annoying sometimes. You also waste a port.
 
Tbh, for a developer, even the 512GB is probably enough. I have 15 VMs (virtualbox/vagrant), plus all my code etc, and I've barely used half of my 512GB SSD. Code and headless VMs/containers don't take up as much space as people think/like to believe. Unless you're developing for Windows, Windows VMs tent to eat space.

In reality, if you're editing media, that's going to eat space - and for that I'd personally go external. Yes, you have to carry an extra drive around, but since the SSD in the MBP is soldered - increased risk of data loss isn't worth it (if your GPU/RAM/MLB fails, you're losing the drive).
