Can you hook up a 2.1 sound system to the original mac mini with a G4 chip? Or does it only support 2 speaker systems.

2.1 systems are baiscally stereo anyway. They just use a subwoofer (mono) and stereo left and right. The subwoofer channel is derived from the stereo mix. So a set of Harman Kardon Sound Sticks for example would work perfectly fine with a mini or any other stereo device (iPod etc) for that matter.
 
Any regular stereo-out will do 2.1, your Mac mini is no different. It's only 5.1 and upwards that needs special equipment to split the signal into the appropriate areas around the room. 2.1 is just regular stereo with the sub using a mix of the low registers from both right and left signals.

Summary - it's gonna work just fine.
