With all the older models coming on the market I am planning on my first purchase of an iPhone. Would actually get a Touch if it had roaming.

Intended uses:
email
maps / traffic
some web

I believe the 2G is on Edge - does that mean I really need one of the 3's?

maps/traffic in your car? then you will have to be on a data plan with att i assume

i would go with the 3gs because you can skip all the hassle and buy it straight from att or apple for only 100 and you get the top of the line of the older models
 
I don't actually understand what you're asking, but I'd just like to say thank you for not writing "iTouch".
 
I would not get anything lower than a 3gs now for sure. Personally I am going to iPhone 4.

Had thought to purchase preowned or refurb, unlock and try TMobile $39 pay as you go.

I also suggest the 3GS as the minimum iPhone to buy at this point.

Be sure to read up on Jailbreaking and make sure you buy one with the proper OS and firmware.

The most recent iPhone software can be jailbroken but it can NOT be unlocked. You need to learn what version of the software you need and buy a phone with that. (Or buy one that's already been unlocked. People are selling those too.)

First there is no 2G iPhone. Many people incorrectly call the Original iPhone a 2G in part because of Apple confusing nomenclature which they are finally correcting. Here is a run down.

Original iPhone or 1st gen (incorrectly called 2G)- works of EDGE aka 2.75G
3G iPhone or 2ed gen - named and works of 3G
3GS iPhone or 3rd gen - named S for Speed
iPhone 4 or 4th gen - finally the name correctly reflects the generation and is no longer confusing
