So I just got my wife the Verizon iPhone today. So now my question is, I am wondering if there is a way when I sync it on my MBP if there is a way we can both have our own contact list?

Any help would be greatly appreciated.

How about if you make a mac login for her separate from yours? I think that would keep the contact lists separate.
 
In the Address Book on your mac, make two groups. For example, John & Jane. Then drag and drop each of your contacts into the appropriate group. Sync your iPhone, go into the settings and tell it to only sync the appropriate contact group.
 
The cleanest way to handle this is to have separate logins for each user that uses the computer. This will keep the contact lists separate as well as keep each of the individual users' preferences, documents, etc separated.
