So, if I manage to install a caddy that actually works, and later decide to install a second SSD to replace the HDD in the caddy, will I be able to enable Trim for both SSDs?

You will have to use the trim hack.

Be aware though people have reported problems using this, but it may work out for you. TRIM is not natively supported on non apple SSDs so you have to use this hack.
