I just bought a new 2TB Time Capsule to use as my main unit but wondering if I can use my older Time Capsule to place in my AV equipment cabinet to run Ethernet to my receiver, Blu Ray player, and Apple TV? My thinking is that the Ethernet connections from the older Time Capsule will be faster/more reliable than the built in wifi of the receiver, Blu Ray, and Apple TV.

You can setup the older TC as extension of your network. You can even turn wifi off and it will basically act as a switch only.

You will want to setup as extension of existing, turn off dhcp.

The Time Capsule lacks a "join a network" mode like its sister, the AirPort Express. If set to extend a network, it will do what you state but at the risk of causing interference.
