My wife and I use one main iCloud account for all the services, but each have our own iCloud email addresses.

Now we have two watches, the Health and Activity apps seem to be merging data from the two watches, presumably because both our phones are signed-in to the same iCloud account as the primary one. So the Health app has both phones and both watches as sources.

What's the recommended way to set this up so we both just get our own daily activity summaries?

Don't share an iCloud account, that's the simple way. At the very least your primary account needs to be different from one another - you can sign into more than one account though for your contacts and calendars (for example).
