Can someone tell me, if you use 2 watches synced to one phone, do the rings synchronize between 2 watches, the calories, stand, exercises?
 
Yes they do. I switch from my S6SS to my S4Aluminum every night and to my S5SS every weekend. Everything gets synchronized when I make the switch.

I am thinking of getting a S7 to replace my S4. I recently started wearing my watch to bed to track sleep but it complicates my charging routine. I am thinking to use my S4 for sleep, and the S7 for daily use. So my S4 would charge all day, and my new S7 would charge all night.

Do you just change watches and the synchronization happens automatically, or do you need to perform some sort of setup? Are there any issues I should be aware of?

The sync should happen as soon as you put the watch on your wrist and it is recognized by the phone.

I wouldn't charge the watch all day. My S4 used for sleep tracking loses about 25-30% over the time I use it (put it on around 7 or 8 PM and take it off at 7 AM). I just put it to charge every night around 6 PM and it is ready to be used within an hour as it only needs to charge up to 30%. Synchronization happens instantly.

Just make sure that when you have your new watch and wear it, the setting on iPhone watch app is auto switching, not manual. The default is already auto. Just want to let you know that you can also change it to manual if you choose.
