Ive noticed that Apple doesn't have a 2 way email sync server if thats the correct term for it. If i delete emails on my iPhone they aren't deleted on my mac or when i log into my email from my providers site (hotmail, gmail. etc) Is there a way around this or any settings to adjust to get the 2-way sync?

The proper term you are looking for is IMAP. Make sure you are using it both on your mac and iOS devices. This will keep them in sync if you have an active connection on both

It's not Apple that's the issue -- it's your mail accounts or how you set them up. Apple has nothing to do with whether or not your mail accounts or connections support sync. Instructions are easily found if you search. You can use ActiveSync for Hotmail on your mobile device. ActiveSync or IMAP for gmail on your mobile device. Not sure what options you have on your Mac for those accounts off the top of my head but IMAP is definitely an option for gmail.
