If I delete the 2005 World Book apps that are bundled with my iBook, it is not going to affect anything else will it? Just want to make sure no other applications rely on them.

Since World Book is a third party app and not integrated with Apple programs, the only change you'd notice is the lack of the "Open Selection" command in the services.
