So, I have a 2008 iMac (8800GS) (purchased in 2010), and it was working totally fine until I went to turn it on this morning. It started beeping. I pulled the power plug, and all was fine again but I just want to know why it does this, because it's happened before. The RAM is fine.

I've had so many replacements on this machine too, it's starting to get annoying:

1 hard drive replacement (was failing)
Another hard drive replacement (was failing again)
1 graphics card replacement
logic board replacement

It's starting to get annoying to have to lug this thing up and down to the Apple store. What is this sound?

3 beeps per 5 seconds is RAM.

Try reseating it, or replacing it with other RAM.
I had this issue with my first 2011 iMac. Apple replaced it and the new one hasn't been as finicky.

If you still have AppleCare, I'm pretty sure Apple will replace your iMac considering the amount of repairs you've had done to it.
