I'm looking to buy a new 15" MBP and replace the DVD with an SSD. It's an open ended question, but do any owners of the latest MBPs have regrets or wish they'd purchased something else? I've seen posts about heat buildup and fan noise as the main complaints, but I'm hoping those kinks have been worked out.

2011 15" MBP owners, looking to buy, any regrets

Unless there's a serious heat problem, it probably won't affect you much because you don't have something to compare it to (older MacBook Pro) so you'll likely think it's normal/acceptable. The truth is that the hardware in the 2011 MacBook Pro's do run warmer so the fans will come on but there are ways to control them with programs like gfxCardStatus and Fan Control.
