For those interested, I bought a 2011 27" Imac and am seeing what it really can do..

I was able to OC the GPU on Boot Camp very well. For those who want to do the same, you'll want to read this.

Windows Server 2008 R2
i7-2600
32gb OWC Ram
OWC Mercury Electra SSD
Radeon HD 6970m 2gb

Programs used to Overclock GPU.
Sapphire Trixx for the overclock
GPU-Z for confirmation
FurMark for Stability Test
MacFan for Cooling Control

Stock Clock=680/900
Overclock =800/1100

Temps never reached 75 degrees and it survived a Furmark test at very high resolution. Appx 20% FPS increase on most games tested. During gameplay, temps never reached 68 degrees. GPU fan speed=2600. CPU fan speed=2400

Trixx tips/warnings.
OC a little bit at a time (increments of 50 at most)
OC core clock and memory clock seperately.
Do not use reset when at 800/1000 or higher. Gradually down clock.
Do not adjust voltage.
I only froze once, and that was from hitting reset instead of gradually down clocking.

Very stable at those temps. Very cool also. Worth the performance increase to me. Can OC more but I am scared to try it for now, maybe when I put the computer in front of a window A/C unit... :p
