I did this on my 2009 iMac, swapped it out to the 2.8 i7

If the get the base 2011 i5 2.7 iMac & later swap the processor to i7 3.4 is it possible like how I did it before?

Please I don't want any lectures about warranty etc. being void, as I am fully aware of it!

Technically it should be possible since they use the same socket and even the same stepping. However, the i5-2500S is a 65W chip so Apple might have saved a few $ and used worse cooling in the base 27".

It's so tight inside that they can't make that many variations it's not worth the tooling costs.

I wonder if the graphics can be changed out too?

It can be but finding a compatible part will cost you a fortune. If you want a beefier GPU, then forget the DIY route and just buy it from Apple. You may end up saving $ that way as form what I have seen, the GPUs go for like 400$.
