(Long Winded My Apologies In Advance :D )

Trying to figure out where to take my current setup and looking for advice.

Current Setup at home:

-2011 iMac 2011 i5 21.5 with Dual Drives (one SSD & one regular)
-2009 Macbook Unibody with SSD
-Apple TV 3
- 2 Samsung Smart TVs (DLNA)
-2 iPhones
- iPad Air
- Apple 4th Gen Time Capsule 2TB

Picked up:
1. Deal on a 2011 Mac Mini i7 Quad Core Server Edition with 500gb HD and 8GB Ram. Got it for next to nothing as it was missing fan, hard drive cables etc. $75 worth of parts and it will good as new. Could be sold for profit.
2. ASUS RT68U AC Router with that T-Mobile Router Promotion.

Computer Uses:

Split between two adults for home and work. Ignore laptop in equation as replacing that with Air or rumored 12".

1. Heavy web work browsing and Email
2. word processing,
3. Remote Desktop (common)
4. Virtual Machine (occasionally)
5. Bookkeeping
6. Occasional handbrake encode (maybe a 5 times a month),
7. Occasional VHS to MP4 for my kids movies.
8. iTunes for videos for the AppleTV occasionally, music is with Match.
9. Possibly add videos for DLNA Smart Tvs for movies for children (TV biggest use would be Netflix still).

Backup:
1. Sell off the time capsule (laptop and desktop backup too now)
2. Either use a server/external HD or NAS as "part" of my backup plan.

My long winded question to all of you is, what do you think makes the most sense:

1. Keep the iMac and add an external HD or NAS, and sell the Mac Mini to make a profit. OR
2. Keep the iMac and Mac Mini (making it a server) with external disks. OR
3. Keep the Mac Mini, add dual monitors, and external disks and sell the iMac off. OR
4. Sell off both Macs and got a different Mac.

I do not need sell to anything financially, but having extra cash is always nice. Dual monitors is nice, but not a necessity.

Any thoughts, suggestions, or things I should consider? I know this sounds crazy, but one reason I originally picked the iMac as my Mac for aesthetics and lack of wires.
