Howdy all, looking for some advice for the more learned people here on how/whether I should/can revert to earlier macOS versions to improve performance.

I'm using a 2012 11" MBA (8gb/128gb) which is in good enough condition for me to keep using it. However, over the years I've continuously updated the OS to the latest, and I believe I presently have Catalina installed. I don't use a lot on this machine, primarily word processing (i.e. Pages), and recently I've been noticing it's sluggish.

My query is whether reverting OS to an earlier version will improve performance, and how far back I have to go? I don't think I'd like to go back further than High Sierra as that's when APFS is included. I'm technically literate enough to do a clean install from a boot USB, and that is what I will do, I'm just not so familiar with the OS architecture to know whether it's worth it. It's only two years, but for those of you keeping tabs on these things, was there a marked decline in performance between High Sierra/Mojave/Catalina?
