i was talking to this apple technician over the phone who was telling me that simply replacing the 1tb hard drive with any ssd would cause the imac fans to roar like some of the previous model imacs..The installation is quite simple to me and i could easily cut through all the adhesive and install it..but is there something im missing out? because it all sounded very simple and i think the dude is just an idiot.

im a long time classic mac pro owner and macbook pro who rarely dabbles in imacs. Any input would be helpful!

technically he is correct, because there is no where to put the thermal sensor on the aftermarket ssd.

But there are ways around this, and they are well documented on this forum here

(basically you can short the sensor).

I believe OWC sells a cable that defeats the sensor also. Because it's an SSD you basically never have to worry about its temp.
