Does anyone use a second Monitor with their 2012 Imac? I'm not too interested in the Thunderbolt display from apple and, would love to see what setups you guys use? I know you have to use different adapters all all! Post away!

Dude, virtually any external display will work. There are hundreds available,I'd say it's time for you to do your own due diligence and start looking at displays you like.
Like rkaufmann87 has quote you can use any external displays, in addition you can use the Thunderbolt to HDMI adapter (many on the market with various prices) they work like a charm!

I bought some cheap thunderbolt to HDMI/DVI/Displayport adapter off Amazon and I have no problems running a DVI monitor or HDMI TV through it from with either my Air or my iMac.
