And the capacity ranges from 1-3TB of which the 3TB is not offered being sold separately in retail yet.

iMac 21" = 2.5"

iMac 27" = 3.5"
 
I'll probably end up with one of these on rev b or c deepening on if Apple make some things standard fusion drive etc plus sort out these laptop drives on a iMac base models.

Everything seems geared to making PROFIT. Example upgrading stuff or getting a 27" even though that could be an over kill. The new iMac looks great, (from the sides, but we use them from the front. so it looks like previous model anyway) and I may yet wind up with one, but if it needs an external optical drive, as well as a laptop hdd ,and it needs external speakers, it is looking less like an "All-In-One". Desktop

On the 27-inch iMac the HDD offered range from 1-3TB. When I saw the 21-inch teardown that Apple is using a 2.5-inch HDD I made the assumption that even the 27-inch will be using 2.5-inch HDD parts. There are already 1 & 2TB 2.5-inch HDD. It is possible that Apple cornered the supply for 3TB 2.5-inch drives.

BTW can you post the link where it states Apple is using 3.5-inch HDD in their 27-inch iMac?

It's a logical assumption, not from a spec sheet - since the 27" has options for 1TB and 3TB then at least one of those must be a 3.5" drive since 2.5" form factor 3TB drives are not available (or if they are, they are absurdly expensive) , so it's logical to assume the 27" iMac's drive bay accommodates a 3.5" drive, so no reason not to make the base drive also 3.5".

25th of Jan, yes.

25th of December; highly unlikely. I got my order in for a 27" with 680MX as soon as the store went live with them and my delivery date is 27/28th December.
 
3TB in a 2.5-inch HDD isn't that far fetch. Apple does order custom hardware. The original MBA's Intel chip was one of them.
