Hey Guys,

As the subject states, looking to find out the largest monitor I can run on a 2012 Mac Mini? I know 4K is not an option (unless I get an eGPU), but what is the option for just OOTB Mac Mini video-card + settings?

The 2012 mini can actually feed out a 4K signal, but:
  • at 30 Hz max
  • only if feeding a video signal to a single display
  • only if that signal is outputted via the Displayport/Thunderbolt port. Not the HDMI port


So basically yes, but mainly desktop/office type of purposes. if you want to go all gung ho on the 4K multimedia consumption, get a 2018 or later mini.
 
For practical purposes, you could get one of the 32" 1440p displays (2550x1440).
It won't be "HiDPI" (i.e., 4k), but pixel size is a decent .277mm.
 
You could buy an 85" TV and feed it via HDMI @ 1080P. It might not fit on your desk, though.
