I updated my 2012 mini to Catalina 10.15.5 and it killed the startup chime which I found useful. I tried the previous fix using the Terminal command sudo nvram StartupMute=%00. That no longer works.

Does anyone else have a fix to get the startup chime back?

You're saying that it worked UNTIL you installed 10.15.5?

Hmmm... perhaps one more option that Apple decided to "take away"...

The startup chime still exists in 10.15.5. No need to stir up unfounded conspiracies.

This command wasn't needed on older Macs like the 2012 Mini. It's just for the newer laptops that don't play the chime by default.
Is your computer muted? If it is, you won't hear the chime on startup.

I can assure you the startup chime was definitely there up until 10.15.4, when I upgraded my Mini to 15.5 the startup chime disappeared.

How do you unmute it?

Edit: I just checked sound settings and the Mute box is unchecked.

Adjust the volume when the computer is running.
You might also reset NVRAM. https://support.apple.com/en-us/HT204063
The volume is all the way up. Resetting NVRAM however is a problem as I can't get the four keys pressed fast enough and the Apple Logo appears. I'm using a Magic Kybd Gen 1, I plugged in my Logitech USB keybd and I still get the Logo. I'm going to shutoff the Mini and unplug it for 60 seconds and try it again. I read that's another way of resetting it. Yeah I can confirm that when I upgraded from 10.15.4 to 15.5, upon the reboots my startup chime disappeared. It's not the end of the world but it's a nice feature to have.

I just now restarted one of my 2012 Minis running 10.15.5 because I was curious ad the chime works completely normally.
It's probably the NVRAM. Unplugging the computer for 60 seconds will not be effective to reset it.

I was wondering about this, I mainly use my 2012 Quad Mini Server with Sierra on an external SSD, but have Catalina installed on the original internal SSD. Just booted into Catalina and got the startup chime. Checked, and I was running 10.15.4 so I updated to 10.15.5. The startup chime still sounds, I did not have to change anything. Not sure what might be different about your 2012 Mini, or if something is muted or wrong. But I can confirm that the statup chime works on mine under 10.15.5.

BTW... why does updating have to be SO painful? It took me almost a half hour to update to 10.15.5. I have FIOS 400/400mbit internet with hardwired gigabit ethernet. This just reinforces my instinct not to update my Macs. ;)

It's good to know it's still there although I am at a loss as to why the startup chime disappeared and I was sitting in front of the Mac watching while it updated to 15.5 and that's when I noticed the startup chime was gone. Again, it's not the end of the world but it's nice to have.

Would unplugging the Mini overnight be enough to reset NVRAM?

FWIW, I updated a 2014 Mini and a 2017 Air to the Mojave 2020-003 update. Both temporarily lost the startup chime. It returned to both after a couple of normal boots.
