Will Apple include a 1gb graphics card in the next 21.5'' iMac

yes for sure because the only card with 512 vRam is 740M and Underneath. From the 750M above they only have 1Gb vRam up to 4 in case of 780M.
So yes for high end 21.5" maybe BTO or standard

There is no guarantee that Apple will use the currently available graphics options/VRAM combinations. After all there wasn't a 680MX until Apple put it in the 2012 CTO 27" iMac.

I could see 512GB/1MB as a differentiator between the 2 21.5" models, but then the 27" models would have to be 1GB and 2GB with probably a 3 or 4GB CTO option on the high end 27".
