I own a 2015 Macbook pro that works very well. However, over time the thread that holds the screws for the bottom case have stripped and now the pentalobe screws do not have any bite left in them to hold the case bottom case onto the chassis.

To specify, the screws themselves are fine. I can use my screwdriver to drive the screws in. The issue is, the thread that the screw bits onto have worn down and now several screws will not thread into the holes.

Has anyone used anything like a slightly larger screw, self tapping screw, or even helicoils to fix this?

FWIW, A logic board replacement is a final solution after I break the machine trying to do something cheaper. At that point i'll buy a new laptop.
 
What I recall from opening my 2015 MBP, is that the case screws are two slightly different lengths that are almost indistinguishable from each other. Not realizing this can lead to stripped threads (or feeling like the threads are stripped if the wrong screw is put in the wrong hole). Look at this diagram carefully (not sure if this is exactly the same as your MBP):
