Reviews taking about fan noise are difficult yo understand as the adjectives (quiet, murmur, pleasant rush) are subjective.

Has anyone had a 2015 MBP 15"? How would you compare that devices fan noise with the 2021 14" MBP with M1 16/24/32 GPU cores?

In your replies, please state which M1 you have - 1/6/24/32. For this question, the focus is on the 14" not 16".

Also, if possible, please tell us if the fan noise has disrupted audio recordings (my 2015 does this).

I'll put up a video...

This is after running baldurs gate 3 for 20 minutes (started a new game, so still on the nautiloid), showing the running game, with the MacBook audio set to silent so you can listen to the fan.

hint: if you hear any low frequency fan/pump noise, its the liquid cooled idle desktop tower PC about 2 feet away on my desk

14" M1 Pro - shot with an iPhone SE right up close to the machine...

Also, how the game runs... my mouse clicks are way louder than the Mac.

Excuse the desktop mess... But yeah listen for yourself, and compare to running any 3d game on a previous MacBook.

 
It's not exactly the model you are considering, but it seems to me users are saying similar things so I'll chip in...I have a 2021 M1 Max Pro 16", and I have a utility that measures fan speeds and temps. I have one work app that can take the temps up to maybe 85°-90° C., and the two fans will report at around 1500-1600 rpm. I cannot hear a thing! (and the top of the keyboard chassis is not hot at all). I was wondering what's the max speed of these fans, anyone know?
 
I have base 16 M1 Pro for more than a month and I don't know if it ever turned on the fans because I haven't heard them once, so to me it sounds almost identical to my previous fanless Air M1.

I have a 2014 13” and tried the M1 13”. Under most conditions the M1’s fan was either off or idled silently, and under load I would say that it was noticeably quieter than the Intel fan. The 14/16 are supposed to have even quieter fans than the M1 13”. The M1 Max will tend to run its fan more than the M1 Pro simply because it has fewer efficiency core, but then the fans will be on for less time because the tasks are completed in less time. The 16” version will stay cooler than the same 14”.

TLDR - Any M1 MBP will be quieter than your IntelBook under the same conditions.
