When I hold the option key and go into disk utility, it shows that my 'Macintosh HD' drive is grayed out. I click erase.... should I still select 'Mac OS extended (journaled) or do I select APFS. It currently shows 'unknown' where my iMac showed Mac OS extended (journaled).

Confused on this part..... don't want to do the wrong thing.

If you don't have an SSD drive in your iMac then APFS is useless at least for now and that includes Fusion drives. Just select Extended Journaled.
