2017 iMac - upgrade from Mojave to ?

I want to upgrade a 2017 27" iMac i5 from Mojave to a more recent MacOS. Generally, I prefer going to the last OS before the current OS to minimize instability. Any recommendations on the best MacOS - Catalina, Big Sur or Monterey - for this Intel computer? Or, any strong recommendations to go to Ventura?
