I have two 24" Dell monitors that I am connecting via HDMI. Prior to me new MBP I was using a 2015 13" MBP with two Thunderbolt 2 to HDMI cables and never had an issue.
For my new 2017 15" MBP I got USB-C/TB3 to HDMI cables.
I have been having issues with the screens blacking out. Going to sleep. Sometimes no signal message but going dark and then appear to be sleeping. I would have to pull the monitor cable at the laptop and plug it back in to restore the second display. There is no pattern either. Sometimes it's my right display...sometimes it's my left. Sometimes the display goes out and stays out...sometimes it goes out and comes back on a few seconds later.
No pattern.
I thought it might be bad cables but then I went and looked at reviews for the same type of cable from other manufacturers and see other people with MBPs with USB-C having the same issues.
In the old days, I'd disconnect a cable / port and swap the ports to see if the problem followed. With USB-C that's not quite effective.
I have been working a case with Apple for 3 weeks now. They have reset PRAM, gathered diagnostics, had me log dates and times and symptoms every time it happens, etc. So far the next step is to work a full day in safe mode to see if the issue persists or not.
Kind of annoying. Wish it could be fixed.
