After having found little information on how to connect my new 2017 MBP to an older Dual-link DVI display I thought I'd share how I finally got it working.

I have two old Dell displays that I have successfully managed to get working with my 2017 15" MacBook Pro with Radeon Pro 560 graphics. The two displays are a Dell 3007WFP 30" (2560x1600) display that only has a single Dual-Link DVI port and a Dell 2408WFP 24" (1920x1200) display that has 2x DVI, single HDMI, and a single DisplayPort input.

A simple USB-C to DisplayPort adapter cable (that I got from Monoprice.com) was enough to get my 1920x1200 resolution display to work correctly when connected directly to the MBP. It would presumably work with a USB-C to HDMI or USB-C to regular DVI as well. The problem was the other display's Dual-Link DVI connection at 2560x1600.

I had tried a "passive" USB-C to Dual-Link DVI adapter cable but it did not work.

Fortunately, I have a CalDigit T3 dock which has a DisplayPort output. The DisplayPort connection worked great with the DisplayPort input of the 1920x1200 display. However, I am now connecting that display via the USB-C adapter to the T3 dock thus freeing up the DisplayPort on the dock.

I then obtained the Apple Mini DisplayPort to Dual-Link DVI adapter. However, to connect it to the CalDigit T3 dock I had to obtain a male DisplayPort to female Mini DisplayPort adapter cable. I found a generic one on Amazon.com and voila, I am now successfully running both displays at their native resolutions. Note that the Apple adapter also has a USB connection that must be plugged in as it requires the USB connection to power the adapter. It also has a USB passthrough which I have connected to my monitor's built-in USB hub.

I hope this helps someone!
