Hey all, just wanted to chronicle my story so that this will help people down the line. Just purchased a refurbished 2018 i7/8/512 (w/ more ram on the way). Upon plugging it in to my monitors, the computer kept crashing and rebooting which was absolutely infuriating. I am using two Thinkvision P24h-10 (1440p) displays which I just recently purchased and worked just fine on my 2012 Mac mini (HDMI>HDMI) and (Mini Display Port > Full size Display Port). I plugged in the new mini using a (HDMI>HDMI) cable and a (USB-C > USB-C) but the machine constantly crashed with the only peripherals connected (apple usb keyboard, usb mouse). The USB-C cable connected monitor did not even turn on, so I tried three different USB-C cables (Anker, Apple one from my MacBook 12" Retina, generic). I then realized the Thinkvision monitors did not like my cables as my MacBook could not trigger a monitor with any of the aforementioned cables either. After reading through Lenovo forums and Apple help forums I realized that the displays might be the culprit so I ran to Best Buy at 8:50pm and bought two Apple branded Thunderbolt cables. Everything is now peachy, 12 hours later. I will comment if anything changes.


TLDR; Certain Monitor cables and Certain Monitors combos with new 2018 Mac mini will cause boot loops, random restarts, lock ups. I used two Apple Thunderbolt cables and it resolved my problems.
 
Two flaws thus far: 1) Upon sleep sometimes the monitors don't remember which was left/right, and it gets switched. Not sure how to even fix this. 2) I can't seem to login my google account via preferences using safari but that's a known issue for 10.14.6

Are those REALLY "thunderbolt" cables that you bought?
I doubt the display you're using is a "thunderbolt" display.

Could you check the packaging and tell us what they really are?
(apple product number, etc.)

The packaging says Thunderbolt 3 (USB-C) Cable (0.8m) and have the lightning bolt logo on the cables/box. MQ4H2AM/A Model: A1896

It was my understanding that the usb-c cables need to usb 3.0/3.1 in order to work? Its possible the three that I have are all usb 2.0.
