On the 2019 Intel 16” MacBook Pro I was looking at pictures and noticed the touchpad is really massive.

It seems like while Typing my wrists might rest on the touchpad. Have any of you found this affects typing in anyway? Say inadvertently moving the mouse?

I have a 2019 16" and have not experienced any accidental touches to the touchpad at all, which honestly has surprised me, I figured it would happen.

I have a 2019 15" MBP (which I think is similar in that it has a massive trackpad) and always had issue with accidentally hitting the trackpad while I was typing. I'd be typing and then suddenly the cursor would move and it would select some random part of the text and suddenly I'd have replaced it with what I was typing. (I'm a pretty fast typer too - so it would happy very quickly). I haven't had this issue with my 14" MBP at all.

Same trackpad on the M1 16" I have, no trouble for me. Some have issues with it, most don't. Best thing to do is try one at a store or somewhere if you can.

The M1 has the same size pad as the 16” Intel?

I've had this problem with every Apple laptop I've tried. Every once in a while, the cursor randomly moves when I'm typing, causing me to insert text where it does not belong. I've turned of tap to click. When I brush the trackpad on purpose, I can't get the insert-point to move. I don't understand it.

I've had this issue occasionally, but it didn't happen to me all the time and wasn't a huge issue. I think the 2021 16" is similar, so if you can try one in a store you might be able to see if it affects you. I'm now using the 2021 14" which has a smaller trackpad that is pretty much out of the way.
