My wife has a 2014 15" MBP that she's ready to replace. To be honest, it is mostly used for email/surfing/Excel. No heavy computing. She likes the bigger screen or an Air would be perfect for her needs. Basically the nub of the question is that the 2019 (Refurb from Apple) is $350 less than the 2021 (Apple Education Pricing). She's open to spending the money IF it makes sense to. What's the best argument either way?

Figured this would be just the audience for a question like this.

Heck I'm thinking about dumping my base model 2019 Pro 16" for an 14" M1 Pro. The '19 is pretty underwhelming in all aspects. I definitely would not buy Pre M1.
 
$350 over the course of 7 years (which is how long she's used her current MBP) isn't much since it doesn't sound like she's upgrading her computer every few years. I'd pull the trigger on the "latest and greatest".
 
I'm kinda in the same boat (need to replace my wife's 2017 15" MBP). Alas, if only Apple made a 16" Macbook Air.
Anyway, in your case the 2021 model is definitely worth the extra 350. HTH
